Ok, here we go. I got a video camera and a gorilla pod so I can make little movies! Today’s video is me making some turkey meatballs. I apologize in advance for the amount of times I say “um” and for my veiny hands. This was truly a labor (of love/hate) and I have a newfound respect for the great digital filmmaker of our time, Andy Samberg, and all those people making “s**t so-and-so says” videos. Hopefully I will have time to do a couple of videos per week henceforth. Hope you like it!
*In the video, I mention the San Marzano tomatoes. Those are good tomatoes. I bought the knockoff can to show that there are lesser tomatoes out there masquerading as San Marzanos, but they are still okay to use. I just thought it was interesting. Also, if you want to add some heat to the recipe, add some red pepper flakes to the tomato braising sauce.
Here’s the recipe for the meatballs. I’m not gonna write down the cooking instructions – you have to watch the video to see how it’s done. Ah ha ha!
Turkey, Boursin, and Mushroom Braised Meatballs
1 lb ground lean turkey
8 oz mushrooms, diced
4 oz Boursin pepper cheese
2 T minced fresh rosemary
2 cloves garlic, smashed
2 cloves garlic, minced
1/4 C basil, chiffonade
1 28 oz can whole tomatoes in their juice
1/3 C panko (Japanese) breadcrumbs
1 T milk
1 whole egg
2 T unsalted butter
1 – 2 T olive oil
Salt, to taste
